



I am a huge believer in comfort food.
I am only skinny when I am really stressed so skinny is not something I aspire to – comfort is!
My mother and sister effortlessly throw together fabulous food but cooking didn’t seem to come hardwired into my DNA. In my youth I made things even the chooks refused to touch. These days using a LOT of delicious ingredients is my fail safe! This is my favourite go to recipe for biccies.
It has its origins in a fifties CWA cookbook but I have dispensed with all the tricky bits!
Just use the base and add whatever you have/are in the mood for.
I make it in one bowl so there is less clean up – melt the butter for about 50 seconds in the microwave, then add vanilla and sugar, stir in eggs and flour. Then the juicy bits. Cook for about 15minutes in a 180 deg oven – until nice and brown. Makes about 2 trays.
Base Recipe
250g butter
Good splash of vanilla extract
1 cup sugar
3 eggs
3 cups of self raising flour
Juicy Bits – Add one, two or all of:-
- Choc Chips (I just cut up a block into chunks)
- Macadamias
- Almonds
- Ginger
- White Chocolate
- 2 spoons of cocoa for double choc
- Or anything else you fancy!
